June 2010- Kale Coleslaw Recipe!
DRESSING:
Whisk together in bottom of your serving bowl:
1 Tablespoon olive oil
1 Tablespoon flax oil
1 Tablespoon MISO
1/2 Tablespoon lemon juice
1/2 teaspoon dijon mustard or mustard powder
1/2 teaspoon crushed/pressed garlic
1 teaspoon onion powder
1/2 teaspoon agave nectar
SALAD:
1/2 bunch kale, destemmed and cut into ribbons (about 1 cup)
1/8 head cabbage, shredded (1 1/4 cups)
2 small tomatoes
chopped 1/8 teaspoon cayenne pepper
2 Tablespoon red onion, finely chopped
1/8 teaspoon sea salt In a separate bowl
Massage the kale well for a couple of minutes to help soften - adding a little salt helps it break-down - it takes on a "cooked appearance". Put kale into bowl with dressing and add the rest of the ingredients. Toss and season with additional salt if desired. You can serve immediately but it will keep in fridge up to 24 hours. Enjoy!

"Detox": Code word for Poop.
Every few months it seems as if there is a new, magic diet program to follow that's touted as the perfect plan for weight loss and total wellness. As of late, headlining the fad diets are the "Detox" Plans. Suddenly, everyone is asking about how to detox. I could write chapters on different detox diets and detox supplements. The bottom line is this: Detoxing the body requires fiber. The main purpose of consuming fiber is elimination. WITHOUT FIBER, COMPLETE ELIMINATION IS NEARLY IMPOSSIBLE! If you can get your body to eliminate effectively and eliminate frequently, you wilI be effectively "Detoxing" I will give you lots of great ways to get more fiber into your diet, but lets first take a look at what Toxins are and why we need to rid our systems of these nasty critters. First, where do toxins come from? They not only come from our environment: inhaling dust, dirt, water we drink, pesticides, undigested foods, chemicals in processed foods, ingested heavy metals...but much toxic waste is comprised of dead cells from our own bodies. You'd think dead cells are so tiny that they cant possibly take up too much space internally, but every year as much as 98% of our cells are replaced. That means anywhere from 70 - 100 pounds of dead cells per year could be passing out of our system. If our bodies do not release these dead cells they can be one of the most toxic kinds of waste build up because they begin to rot right away. When we don't consume enough fiber, we can accumulate a lot more waste than what our bodies can handle. The human body simplly cannot eliminate without fiber. Lack of fiber and build up of internal toxins in the bowels, intestines and other organs can cause serious illness, low energy, and a long list of nasty symptoms. Not only that... but, GROSS! All that (literal) crap is much better out than in! Here are a few indications that you need to "Detox" and increase the fiber in your diet:
Constipation: Ok , so we're all adults here, right? We can talk about poop. Folks, you need to have a bowel movement EVERY DAY. Not only that, when you poop, it should not involve a major abdominal workout on the toilet or take a half hour. (Guys - go, and get out!)
Weight Gain: "Fiber contributes to satiety," says Kathleen Zelman, MPH, RD, director of nutrition for WebMD. Satiety is that feeling of comfortable fullness you get after a meal.Try meeting the recommended goal of 25 to 35 grams of fiber daily by enjoying fiber-filled foods like fresh fruit with the skins on and lots of vegetables. The fiber will help you feel satisfied.
Low energy and Tiredness: If you're getting most of your calories from a high-protein/low-carbohydrate diet -- one rich in meat, eggs, and cheese and low in produce it may leave you feeling a lack of energy. Try boosting your dietary fiber with the vitamin- and mineral-rich fruits and vegetables your body needs, and cut back on the massive amounts of fat contained in animal protein. Try detoxing naturally by increasing your fruit, veggie, and fiber intake! One of my favorite ways to boost fiber intake is by eating ground flax seeds. Simply grind whole flax seeds in a coffee grinder or personal blender then sprinkle on fruit, on your salad, or put them in your smoothies. Super easy and 2 tablespoons - 1/4 cup of ground flax seeds daily is guaranteed to keep you regular! Feel free to email me with your questions or other fiber boosting tricks you've tried!
